Why Some Bubbles Get So Big

Not all bubbles are created equal. Some pizzas have small, subtle air pockets, while others develop large, dramatic blisters. A few factors influence this:

1. Dough Fermentation
Longer fermentation (especially cold fermentation in the fridge) allows more gas to build up. This often leads to larger bubbles and a more airy crust.

2. High Heat
Hot ovens—especially those mimicking pizza ovens—cause rapid expansion. The faster the heat hits the dough, the more dramatic the puffing.

3. Uneven Dough Thickness
If some parts of your dough are thinner than others, gas can collect in specific spots, creating large bubbles instead of evenly distributed ones.
