Lasagna Soup with Creamy Alfredo
**Ingredients**
– 1 pound (450g) ground beef or Italian sausage
– 1 small onion, diced
– 3 garlic cloves, minced
– 4 cups chicken or beef broth
– 1 can (14 oz) diced tomatoes
– 1 cup marinara sauce
– 1 teaspoon dried basil
– 1 teaspoon dried oregano
– 1/2 teaspoon red pepper flakes (optional)
– 8 lasagna noodles, broken into pieces
– 1 cup Alfredo sauce (store-bought or homemade)
– 1 cup shredded mozzarella cheese
– 1/2 cup grated Parmesan cheese
– Salt and pepper to taste
– Fresh parsley or basil for garnish

2. **Build the Base:**
Stir in the broth, diced tomatoes, marinara sauce, basil, oregano, and red pepper flakes. Bring the mixture to a gentle boil.
3. **Cook the Noodles:**
Add the broken lasagna noodles to the pot and simmer for 10-12 minutes, or until the noodles are tender. Stir occasionally to prevent them from sticking.
5. **Add the Cheeses:**
Stir in the mozzarella and Parmesan cheeses, allowing them to melt into the soup. Adjust the consistency by adding more broth if needed.
