Cheese, Vegetable and Egg Tartines
Ingredients:
8 slices of country bread
200 g grated cheese (cheddar, mozzarella, or a mixture of both)
1 carrot, cut into small cubes
1 bell pepper, cut into small cubes
100 g peas (fresh or frozen)
3 eggs
2 tablespoons crème fraîche
Salt and pepper
Herbes de Provence or parsley for garnish
Instructions:
Preparation of the filling:
In a frying pan, sauté the diced carrot and pepper with a little olive oil until tender. Add the peas and mix.
Pour the beaten eggs into the pan and mix gently until the eggs are cooked but still slightly runny. Remove from the heat.
