- 1/2 cup sun-dried tomatoes (packed in oil), drained and roughly chopped
- 1 tablespoon olive oil (use the oil from the sun-dried tomatoes for extra flavor)
- 3 cloves garlic, minced
- 1/2 cup heavy cream
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese (plus more for garnish)
- 1/2 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
- Salt and freshly ground black pepper, to taste
- Fresh basil or parsley, chopped (for garnish)
Instructions:
Step 1: Cook the Pasta
Start by bringing a large pot of salted water to a boil. Once it’s boiling, add your pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta. This starchy water will help thin out the sauce if needed and give it a silky texture.
Step 2: Make the Sun-Dried Tomato Cream Sauce
In a large skillet, heat the olive oil (or sun-dried tomato oil, for extra flavor) over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant. Be careful not to burn the garlic.
Add the chopped sun-dried tomatoes to the skillet and cook for another 2-3 minutes, allowing the tomatoes to soften and release their intense flavor. If you like a bit of spice, this is the moment to add the red pepper flakes.
