Step 1: Brown the Beef
- In a large pot or Dutch oven, heat the olive oil over medium heat.
- Add the ground beef and cook until browned and crumbled, about 6–8 minutes. Drain any excess fat if needed.
Step 2: Sauté the Vegetables
- Push the cooked beef to one side of the pot and add the diced onion, garlic, carrots, and celery to the other side. Sauté for 3–4 minutes until softened.
- Stir everything together to combine.
Step 3: Simmer the Soup
- Pour in the chicken or beef broth and add the diced potatoes, smoked paprika, dried parsley, salt, and pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low and simmer for 15–20 minutes , or until the potatoes are tender.

- Stir in the heavy cream and 1 ½ cups of shredded cheddar cheese. Cook over low heat, stirring constantly, until the cheese is melted and the soup is creamy. Do not boil after adding the cream and cheese.
