In another bowl, beat the egg. Then, add the milk (or buttermilk), melted butter (or oil), and vanilla extract if you’re using it. Whisk until well combined.
Now, pour the wet ingredients into the dry ingredients. Stir gently with a spatula or wooden spoon until the batter just comes together. It’s okay if there are a few lumps—do not over-mix the batter, as this can result in dense pancakes. The batter should be thick, but pourable. If it’s too thick, you can add a splash more milk to get the desired consistency.
Heat a non-stick skillet or griddle over medium heat. Once it’s hot, lightly grease it with cooking spray, butter, or a small amount of oil. Using a 1/4 cup measuring cup, pour the pancake batter onto the skillet. Cook for about 2-3 minutes, or until bubbles start to form on the surface of the pancake and the edges look set.
Step 6: Serve and Enjoy
Serve your pancakes immediately, topped with your favorite syrup, fresh fruit, whipped cream, or butter. If you want to keep the pancakes warm, place them on a plate in the oven at a low temperature (about 200°F) until all your pancakes are cooked.
