4 boneless, skinless chicken breasts
2 medium zucchinis, sliced into rounds
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon ground cumin
Salt and pepper, to taste
1 cup crumbled feta cheese
1/2 cup Kalamata olives, pitted and sliced
1/2 cup cherry tomatoes, halved
Fresh parsley, chopped (for garnish)
Directions:
Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil or non-stick spray.
Arrange in the Baking Dish: Place the seasoned chicken breasts in the center of the prepared baking dish. Surround the chicken with sliced zucchini, spreading them evenly around the chicken.
Top with Mediterranean Ingredients: Sprinkle the crumbled feta cheese over the chicken and zucchini. Add the sliced olives and cherry tomatoes on top, distributing them evenly.
Finish with Fresh Herbs: Once the dish is out of the oven, garnish with freshly chopped parsley for a burst of color and added flavor.
Serving and Storage Tips:
Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. To reheat, simply place the bake in the oven at 350°F (175°C) for about 10-15 minutes or microwave individual portions for 1-2 minutes.
Freezing: You can also freeze leftovers for up to 2-3 months. Make sure to wrap the dish tightly in plastic wrap or aluminum foil before placing it in a freezer-safe container.
Chicken Thighs: If you prefer dark meat, you can use boneless, skinless chicken thighs instead of breasts. They’ll add a juicier texture to the dish.
Add More Veggies: Feel free to include other Mediterranean vegetables like bell peppers, red onions, or eggplant. These add more color and nutrition.
Herb Variations: For an added depth of flavor, try using fresh herbs like basil, oregano, or thyme instead of dried herbs. Fresh herbs will elevate the Mediterranean taste even more.
