Eggs with Sweet Potatoes: Why?
Vitamins, minerals, and fiber abound in sweet potatoes. They are naturally sweet and packed with antioxidants, which are good for your health in general and your immune system in particular. In contrast, eggs are rich in protein and heart-healthy lipids. The combination of these two components makes for a well-rounded and filling meal that works well at any meal of the day.
Peel and dice one big sweet potato.
1/4 cup of extra-virgin olive oil
Garlic powder, 1/2 teaspoon
Toss with salt and pepper.
For garnish, you may optionally add chopped fresh parsley or chives.

(2) Get the Sweet Potatoes Started:
Once the sweet potatoes are chopped, place them in a bowl and cover them well with olive oil, paprika, garlic powder, salt, and pepper.
On a baking pan, evenly distribute the seasoned sweet potatoes. After 20 to 25 minutes of roasting in a preheated oven, they should be soft inside and somewhat crunchy on the outside. Halfway through cooking, stir to make sure they’re cooked evenly.
