Lay the sweet potato rounds in a single layer on a baking sheet lined with parchment paper. Ensure they don’t overlap to allow every piece to crisp up nicely.
Place the baking sheet in the preheated oven and roast for about 20-25 minutes.
After the initial roasting, flip each round and continue to roast for another 10-15 minutes or until they are tender inside and crispy on the edges.
Once done, remove the sweet potatoes from the oven. If you like a bit of extra sweetness, drizzle some honey or maple syrup over the hot sweet potatoes.
