1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper or aluminum foil for easy cleanup.
3. In a mixing bowl, combine the minced garlic with olive oil, salt, and pepper. If using fresh herbs, chop them finely and add them to the garlic mixture for extra flavor.
4. Add the cleaned mushrooms to the bowl with the garlic mixture. Toss gently to coat the mushrooms evenly with the garlic-infused oil.
6. Place the baking sheet in the preheated oven and roast the mushrooms for 15-20 minutes, or until they are tender and golden brown, stirring halfway through the cooking time for even browning.
7. Once roasted to perfection, remove the mushrooms from the oven and transfer them to a serving dish.
9. Serve the roasted garlic mushrooms hot as a side dish alongside grilled meats, poultry, or fish. They also make a delicious topping for pasta, rice, or quinoa, or as a flavorful addition to salads.
