Brown the Meat: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef or turkey and cook until browned. Remove excess fat if needed.
Sauté Veggies: Add the diced onions, garlic, and bell peppers to the pot. Sauté until the vegetables are soft, around 5-7 minutes.
Add Tomatoes and Seasoning: Stir in the diced tomatoes, tomato paste, and broth. Add chili powder, cumin, paprika, oregano, cayenne pepper, salt, and pepper. Mix well to combine.
Simmer: Bring the chili to a boil, then reduce the heat to low. Let it simmer, uncovered, for about 1 to 1.5 hours, stirring occasionally. This allows the flavors to meld together and the chili to thicken.
Adjust Seasoning: Taste and adjust seasoning as needed. If it’s too thick, add a bit more broth or water to reach your desired consistency.
