HAWAIIAN PINEAPPLE CAKE

Ingredients:

– 2 cups all-purpose flour
– 2 cups sugar
– 2 eggs
– 1 tsp baking soda
– 1 tsp vanilla extract
– Pinch of salt
– 1 (20 oz) can crushed pineapple (undrained) in its own juice
– 1 cup chopped nuts (optional)

For the Cream Cheese Frosting:

– ½ cup butter (1 stick), softened
– 1 (8 oz) package cream cheese, softened
– 1 tsp vanilla extract
– 1 ½ cups confectioners’ sugar
– Coconut for garnish (optional)
