1. Prepare the Potatoes:
Peel and coarsely grate the potatoes.
2. Prepare the Onion and Pepper Mixture:
Dice the onion.
Cut the red bell pepper into chunks, remove the stems and seeds, and rinse well.
Stir in the red bell pepper chunks and continue to cook for an additional 5-7 minutes. Remove from heat.
3. Make the Potato Mixture:
Drain the water from the grated potatoes and squeeze out any excess moisture.
4. Assemble and Bake:
Preheat the oven to 180°C (350°F).
Spoon the potato mixture evenly into the dish.
Optionally, sprinkle grated cheese over the dish.
Bake in the preheated oven for 50 minutes, or until the potatoes are tender and the top is golden brown.
