1 big onion, diced
4 cups of fresh or frozen chopped green beans
4 cups of tomato juice
Fresh or frozen corn.
1 teaspoon of Italian herbs
2 leaves of bay laurel
In a big pot, put together the potatoes, water, carrots, onion, salt, and pepper. Bring to a boil.
Put in the rest of the ingredients. Cover the pot and let it cook over low heat for another 30 minutes or until it is hot, stirring from time to time.
Remove bay leaves before serving.
