Peel and slice the potatoes thinly (about 1/8-inch thick slices). You can use a mandolin or knife for uniform slices.
Mix the Sauces:
In the greased casserole dish, arrange a layer of sliced potatoes.
Spread a portion of the cooked ground beef mixture on top.
Pour some of the soup mixture over the beef.
Sprinkle about 1/3 of the shredded cheddar cheese over the top.
Repeat the layers until all ingredients are used, finishing with a final layer of shredded cheddar cheese.
Bake:
Let the casserole cool slightly, and garnish with fresh parsley or chopped green onions if desired.
