1. Heat a skillet over medium-high heat and add 1 tablespoon of butter along with the olive oil.
2. Season the steak bites with salt and pepper, then sear them in the skillet until they are browned and caramelized on all sides, about 3-4 minutes. Remove and set aside.
4. Beat the eggs with salt and pepper in a bowl. Pour into the skillet, stirring gently until they just begin to set.
5. Return the steak bites to the skillet with the eggs. Stir gently to combine until the eggs are fully cooked but still soft and creamy.
