Ingredients:
1/2 ripe banana
1 cup ripe mango (frozen or fresh, diced)
1/4 cup blueberries (frozen or fresh)
4 fresh mint leaves
Instructions:
In a blender, combine coconut milk, banana, diced mango, grated ginger, blueberries, and fresh mint leaves.
Blend until smooth and creamy. Adjust consistency with more coconut milk or water if needed.
Adjust sweetness or tartness with honey, agave syrup, or lime juice to taste.
