Instructions:
- Prepare the Garlic Salsa:
- In a medium saucepan, heat a little olive oil over medium heat.
- Add the minced garlic, chopped onion, and jalapeño peppers. Sauté for a few minutes until the onion becomes translucent.
- Stir in the diced tomatoes, lime juice, and half of the chopped cilantro.
- Season with salt and pepper to taste.
- Let the salsa simmer for about 10-15 minutes, stirring occasionally. Adjust the spiciness and seasoning according to your taste.
- Remove from heat and set aside.
- Cook the Shrimp:
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Season the shrimp with ground cumin, smoked paprika, salt, and pepper.
- Add the seasoned shrimp to the hot skillet and cook for 2-3 minutes per side or until they turn pink and opaque.
- Once the shrimp are cooked, remove them from the skillet and set aside.
- Assemble the Dish:
- Warm the flour tortillas in a dry skillet or microwave for a few seconds until pliable.
- To assemble each taco, place a few shrimp in the center of a tortilla.
- Spoon some garlic salsa over the shrimp.
- Top with avocado slices and a dollop of sour cream or Mexican crema.
- Sprinkle with the remaining cilantro and serve with lime wedges.
