Step 1: In a large skillet, melt 2 tablespoons of butter over medium heat.
Step 2: Add the halved baby potatoes to the skillet, season with salt and pepper, and cook for about 10 minutes, stirring occasionally, until the potatoes are golden and fork-tender. Remove the potatoes from the skillet and set aside.
Step 3: In the same skillet, melt the remaining 2 tablespoons of butter over medium-high heat.
Step 4: Add the minced garlic, dried thyme, and dried rosemary to the skillet, and cook for 1 minute until fragrant.
Step 5: Add the steak pieces to the skillet in a single layer, ensuring they are not overcrowded. Season with salt and pepper.
Step 6: Sear the steak for about 3-4 minutes per side, or until desired doneness is reached. Cooking time may vary depending on the thickness of the steak and your preference.
Step 7: Add the cooked potatoes back into the skillet and toss them with the steak.
Step 8: Remove the skillet from heat and let it rest for a few minutes to allow the flavors to meld.
